Lemon Vinaigrette Dressing

A light dressing perfect for any salad.

Servings: 6

 

Ingredients:

  • 4 tablespoons fresh lemon juice

  • 1 teaspoon lemon zest

  • 1/4 cup white wine vinegar

  • 1 small garlic clove (optional)

  • 1 egg yolk

  • 1 tablespoon Dijon-style mustard

  • 1/2 cup extra virgin olive oil

  • 1/2 cup vegetable oil

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

 

Steps:

  1. Place lemon juice and zest in a medium sized bowl. Squeeze the garlic, if using, through a garlic press into the bowl. Allow to sit for 10 minutes.

  2. Add the vinegar, mustard, and egg yolk to the bowl and whisk to combine.

  3. Combine the oils in a measuring cup and very slowly at first (only a few drops) add the oil to the mixture while whisking vigorously.

  4. Continue to add the remainder of the oil while whisking. Season with salt and pepper.

 

Helpful Tips:

  • Increase or decrease the amount of garlic to your own liking.
