A light dressing perfect for any salad.
Servings: 6
Ingredients:
4 tablespoons fresh lemon juice
1 teaspoon lemon zest
1/4 cup white wine vinegar
1 small garlic clove (optional)
1 egg yolk
1 tablespoon Dijon-style mustard
1/2 cup extra virgin olive oil
1/2 cup vegetable oil
1 teaspoon salt
1/2 teaspoon pepper
Steps:
Place lemon juice and zest in a medium sized bowl. Squeeze the garlic, if using, through a garlic press into the bowl. Allow to sit for 10 minutes.
Add the vinegar, mustard, and egg yolk to the bowl and whisk to combine.
Combine the oils in a measuring cup and very slowly at first (only a few drops) add the oil to the mixture while whisking vigorously.
Continue to add the remainder of the oil while whisking. Season with salt and pepper.
Helpful Tips:
Increase or decrease the amount of garlic to your own liking.
